Time to Relax – Maybe a Little

August is a time for a little more relaxing than what we experience with the excitement of new things happening in the spring, the exhaustion of picking strawberries everyday for a month, and the hectic hurriedness of the fall harvest. It's a time of maintenance. Moving livestock to fresh pastures regularly and doing the last round of weeding in the gardens.

Martin has had time to give more thought to the details for the new beef cow shelter and to gather the building materials for it. Sometimes, planning a project takes more time and energy than the actual building of it does.

The garlic is harvested and curing in the shed. Potatoes and onions are being brought to the store for sale. Garden greens, zucchinis, and cucumbers are seasonal treats we all enjoy.

Talking about enjoyment on the next level…the guys extracted honey last week. And there was a lot! And it is the best honey we've ever had! The bees are liking their super insulated hives and rewarding us with a copious amount of their work.

Harvest Haven Honey

Honey has been used throughout the world for thousands of years, not only for the pleasure of eating, but also for its health benefits. Raw honey is more than a sweet treat. It is rich in antioxidants and contains a variety of vitamins, minerals, and amino acids.

Some studies have shown that raw honey may help with reducing the effects of seasonal allergies, healing wounds and burns, preventing acid reflux, fighting infections, relieving cold and cough symptoms, improving heart health, and managing and improving blood sugar levels.

However, it must be RAW honey, not pasteurized. Raw honey contains specific components that offer health benefits. Pasteurization and other processes remove or reduce some of these elements.

Some regular honey you find may contain sugars and other additives. Although it is illegal, it still happens. Raw honey does not contain any ingredients other than the honey from the beehive.

And not all organic honey is raw honey. Organic honey may still have undergone some processing and pasteurization.

Harvest Haven Honey is not only RAW, but it has absolutely no chemicals, not even those approved by organic certification. Our bees forage on our chemical-free fields and are not exposed to formic acid and oxalic acid, which organic certification allows to treat varroa mites.

Most people think the greatest threat to the honey bees are the chemicals used in agriculture, when in reality the greatest threat to the bees is modern beekeeping. No other agricultural profession suffers such tremendous losses without anyone even hearing about it.

Fifty percent of Alberta honeybee colonies perished in the winter of 2020-2021. And so far, we haven't heard of anyone rethinking modern beekeeping practices. The devastating losses are continually blamed on bacteria, viruses, and parasites. Apparently, nothing can be done, except use more chemicals. Noticeable amounts of these contaminants can be found in the honey from all treated hives.

We've been determined to solve this problem and recently designed new hives that allow the bees to keep the hive exactly at their preferred temperature and humidity. So far, it's been successful. The conditions the bees engineer when given the resources are far too warm and humid for mites to proliferate. Therefore, we don't need to treat the hive with any miticides, which also harm the bees. Our bees are far heathier and more productive without using any chemicals at all.

Harvest Haven Honey is hands down the real deal.

Health Benefits of Zucchini

Yes, zucchini is nutritious. Known for its profusion and endless jokes about being shared with everyone in the neighborhood, this mild flavored summer squash is packed with many important vitamins, minerals, and antioxidants.

Zucchini contains zeaxanthin and several other compounds that can play a role in preventing oxidative stress. This, in turn, may limit the likelihood of developing cancer. Zeaxanthin and lutein reduce the risk of developing cataracts and other eye-related health problems.

The Recipe Box

BBQ Chicken Breast

4 boneless skinless Harvest Haven chicken breasts
Extra virgin olive oil
Salt, to taste
Freshly ground black pepper, to taste
1/2 cup of your favorite BBQ sauce

Prepare the grill for direct cooking at high heat (450°F). Brush the cooking grates clean.

Drizzle the chicken breasts with extra virgin olive oil and rub over the breasts. Season generously with salt and freshly ground black pepper.

Place the chicken breasts on the hot grill. Cover and cook for 5-6 minutes or until they easily release from the grates. Flip the chicken and cook for 4-5 minutes longer. Baste the chicken breasts with BBQ sauce, flip and cook for 2 minutes on each side. Repeat on the other side. Cook until the breasts are firm to the touch and opaque all the way through, registering 160°F internal temp (the temp will rise to 165°F as the chicken rests).

Transfer to a plate and cover with a piece of aluminum foil and let rest for 5 minutes. Serve with more BBQ sauce if desired.

New Potatoes with Creamy Dill Sauce

1 lb Harvest Haven new potatoes
2 tablespoons butter
1/2 cup heavy cream
Fresh chopped dill
Salt & pepper

Add the potatoes to a pot of boiling water and cook until fork-tender, about 10 to 15 minutes. Drain the cooked potatoes and return to the pot.

Add in the butter and heavy cream and bring to a boil, then reduce the heat to medium-low. Simmer for another 8 to 10 minutes or until the cream sauce has thickened enough to coat the back of a spoon.

Remove the potatoes from the heat and stir in the salt, pepper and fresh dill to taste. Enjoy!

Peach Upside Down Mini Cakes

For Topping:
Butter for greasing pan
1 tablespoon cold butter
6 teaspoons brown sugar

For Cake Batter:
3 fresh peaches
1 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2/3 cup sugar
1/3 cup butter at room temperature
1 large Harvest Haven egg at room temperature
1 teaspoon vanilla extract
1/2 cup buttermilk at room temperature

Preheat the oven to 350°F. Grease muffin pan with butter.

To Prepare Topping:
Cut 1 tablespoon of butter into 12 equal parts. (TIP: cold butter is easier to cut.) Place each butter piece in 12 muffin cups.

Sprinkle 1/2 teaspoon of brown sugar into each muffin cup.

Slice 1-2 peaches into thin slices. Arrange about 3 slices into the bottom of each muffin pan.

To Make Cake Batter:
Cut the remaining peaches into small cubes. You should get about 1 cup of cubed peaches. Set aside.

In a small bowl, whisk together flour, baking powder, baking soda and salt.

In a mixing bowl with paddle attachment, beat butter and sugar together until fluffy and creamy, about 2 minutes.

Add egg and vanilla extract and beat it for another 2-3 minutes, or until well combined. The mixture should be fluffy and white. (Note: It's totally normal for the mixture to curdle right after adding egg, but keep mixing and it'll turn nice and fluffy!)

Add half of the flour mixture into the batter, beat for 1 minute on low speed.

Stir in the buttermilk and beat for another minute.

Add the remaining flour mixture and beat just until combined. Don't over-mix the batter, or it'll make tough cake.

Fold in the cubed peaches.

Divide the batter into 12 muffin pan cups. (TIP: A large cookie scoop makes this step super easy – one scoop of batter in each muffin cup.)

Bake for 25-30 minutes, or until inserted toothpick comes out clean.

Cool the cakes in the pan for 5 minutes. Then carefully run a butter knife around the edges to release the cake from the sides. Now, place a wire rack over the muffin pan and carefully turn the pan upside down to remove the cakes.

Serve the mini cakes warm with a scoop of vanilla ice cream.

This method of raising livestock improves the grasses and forbs on the pastures, provides habitat for wildlife and flowers for the bees, and sequesters a huge load of carbon dioxide.
