Around the Farm

You'd have to be living under a rock not to be aware of the storms that are happening in Canada and around the world. If you're interested in our thoughts, you can ask or go toThe Path Of Truth videos.

The Lord Jesus Christ is in control of everything, and we rest in Him above the storms.

Meanwhile, we have a farm that God gave us, and we take pleasure in tending to it.

Around the farm, preparations for spring are in progress. The lambing pens are set up as the ewes are only days away from having their lambs. The layer chicks are growing quickly under their wooden hens. Martin's mini greenhouse for the onions has proven to work exceptionally well, as there's been almost 100% germination and lots of green growth.

Because we had some snow, James was able to start up his grader and clear the roads. No waiting for his summer sandbox and messy thaws.

Lamb Chops with Mustard Thyme Sauce

Marinade
2 tablespoons olive oil
2 tablespoons lemon juice
Thyme, fresh
¼ teaspoon black pepper, cracked
¼ teaspoon sea salt
3 cloves Harvest Haven garlic, minced

Lamb Chops
1 tablespoon olive oil
4 Harvest Haven lamb chops

Sauce
1 cup white wine or red wine
? cup Dijon mustard
fresh thyme
1 clove Harvest Haven garlic, minced

How to marinate lamb chops:
Combine olive oil, lemon juice, thyme, blacked cracked pepper, sea salt, and minced garlic in a medium bowl. Mix.

Arrange lamb chops on a large plate. Pour the marinade over the lamb chops. Make sure the lamb chops are covered with the marinade from all sides.

Let the lamb chops sit at room temperature in this marinade for 30 minutes.

How to sear lamb chops:
Heat 1 tablespoon of olive oil on medium heat in a large skillet until hot. Add lamb chops.

Cook on medium-high heat about 4 minutes on one side. Then 4 minutes on medium heat on another side.

Remove the lamb chops from the skillet.

How to make the sauce for lamb:
Add wine to the same skillet and bring to boil.

Add mustard, fresh thyme, and minced garlic.

Bring to boil and reduce the sauce, until it thickens. It should take a couple of minutes.

Add back the pan-seared lamb chops.
Simmer on low-medium heat to heat them through.

Season the sauce with salt and cracked black pepper, if needed.

To serve, spoon the sauce over lamb chops and sprinkle more fresh thyme on top.

Scalloped Potatoes

4 1/2 cup extremely thin sliced Harvest Haven potatoes, if you lay horizontal see notes below for vertical potato baking
3/4 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1/2 tsp onion powder
1/2 tsp garlic powder
3 tbsp butter
3 tbsp all-purpose flour
1 1/2 cup half and half
1 cup Monterey jack cheese divided
1 cup cheddar cheese divided

Wash potato slices then dry them completely and set to the side.

Add salt, pepper, paprika, onion powder and garlic powder to a large bowl and whisk together until combined.

Preheat oven 400 F. Grease a large casserole dish with a cover.

In a medium pot over medium heat, melt butter. Whisk in flour into melted butter until completely combined.

Whisk in half and half and a ½ cup of Monterey jack cheese and a ½ cup cheddar cheese until completely combined then remove from heat and set aside.

Add dried potato slices to the seasoning bowl and toss evenly covering all the slices with seasoning. Add half of the potatoes in one layer to the pan if adding horizontally and the classic way then pour half of the cheese sauce over them and spread it out covering the layer.

Repeat with the final layer of potatoes and pour remaining cheese sauce on top. Sprinkle the top with remaining cheese. (Note: If stacking vertically, you will need to add all of the potatoes and then pour the cheese sauce on top and sprinkle with cheese. See notes below on changing the seasoning amount needed.)

Bake covered in the oven for 30 minutes then remove the cover and bake for an additional 30-50 minutes (depending on how thick your slices are) or until cheese is melted and bubbly and potatoes are completely tender.

Remove from oven and allow to cool for 10-15 minutes then serve.

Notes

Regarding horizontal versus vertical potatoes. For horizontal slices, you should be fine with 4 1/2 cups of potatoes. No need to change any of the measurements. However if you want to use the same amount for vertical potatoes, go with a smaller dish. If you need to fill a large dish, you might need up to 4 lbs of potatoes however it looks quite gorgeous if serving for entertaining. If you do so, you will need to double seasoning ingredients and sauce just to be safe. You can then decide how much sauce you will use.

If possible, use a mandoline to achieve uniform slices. Otherwise, use a very sharp knife (carefully) to cut the slices. Aim for potatoes that are about an ? inch thick.

Zucchini Brownies

1/2 cup sunflower oil
1 1/2 cups sugar
2 teaspoons vanilla extract
2 cups flour
1/2 cup cocoa powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 cups shredded zucchini
1 cup semi-sweet chocolate chips, divided

Preheat oven to 350 degrees and spray a 9x13 inch baking pan with baking spray.

In a large mixing bowl whisk together vegetable oil, sugar, and vanilla extract until smooth.

Sift flour, cocoa powder, baking soda, and salt and whisk it into the mixing bowl until just combined.

Stir in zucchini and ½ cup chocolate chips.
Press mixture into a baking dish and top with remaining chocolate chips.

Bake for 25-30 minutes.
