You can boil, broil, fry, or barbeque! Toast buns, if desired. Place wieners in buns; top with sauerkraut, Swiss cheese, and Thousand Island dressing. Thousand Island Dressing 1/2 cup mayonnaise 2 tbsp ketchup 1 tbsp white vinegar 2 tsp sugar 2 tsp sweet pickle relish 1 tsp white onion, finely minced 1/8 tsp salt 1 dash black pepper Combine all of the ingredients in a small bowl. Stir well. Place dressing in a covered container and refrigerate for several hours, stirring occasionally, so that the sugar dissolves and the flavors blend. | Harvest Haven Oven Fries Preheat oven to 400 F. Place fries on baking sheet. Add salt to taste. Bake for 30 minutes, turning the fries over half way through. Pizza Fries: Top cooked fries with shredded mozzarella, cheddar, and pepperoni slices. | Glazed Orange Cake 2 1/4 cups all purpose flour 1 1/2 tsp baking powder pinch salt 1 1/4 cup sugar 3/4 cup butter zest of one orange 3 Harvest Haven eggs 3/4 cups milk Orange Glaze 3/4 cup Icing sugar juice of half an orange Pre-heat oven to 350°, grease and flour an 8 or 9 inch bundt pan. Orange Cake In a large bowl whisk together the flour, baking powder, salt and sugar, add butter and cut in until mixture resembles coarse crumbs, then stir in the zest. In a medium bowl with a fork or whisk beat together the eggs and milk, then pour into the dry ingredients and stir together until just moist (do not over stir). (If you like more orange flavour add the juice of half an orange). Pour into prepared bundt pan and bake for approximately 40-60 minutes. Check for doneness with a toothpick. Let cool completely before adding the glaze. Orange Glaze In a small bowl whisk together until smooth the icing sugar and juice. (If you like it thicker add more sugar). | We have beef – lots of beef! As we were enjoying lunch and conversation at the farm, the buzzer went to let us know someone was driving in. Glancing out the window, we were stunned to see a semi-truck with two long trailers loaded with large round bales, followed by another truck and trailer loaded with more bales. "Wow! That's a lot of hay, Martin!" exclaimed Victor. "Do we need that much?" Martin looked at Victor and confidently replied, "Ha! What do you think! Would I have ordered that much hay if I didn't think we needed it? We have a lot of cattle." Sure enough, when we went to the corrals after the bales had been stacked around them, we saw what to us is a lot of cattle. We ran out of beef last spring and are hoping not to have that happen again. Our customers appreciate our pasture-raised beef, and we want to have enough for everyone. No more, "Where's the beef?"
