And what a harvest it was - super abundant and excellent quality! The root cellars have never been fuller. They smell of such fresh earthy goodness! With harvesting during the day, Martin had to put on his headlamp and work in the evening on his brick-walled entrance to one of the root cellars. It's coming along and should be done shortly. At this time of year, farmers put in long days. We all know what's around the corner. | Turkeys are wonderfully sociable and curious creatures. They are animated, vocal, friendly, and will not fail to peck at your shoelaces or the rivets on your back pocket. The confinement turkey farms have absolutely no respect for the personality and expression of turkeys. Their only goal is to create as many pounds of flesh as possible for the smallest dollar. Our goal is maximum health and maximum happiness for animal, farmer, and consumer. This video was done last year after the trespassing incident at a local Hutterite colony. Martin describes why it's important to let turkeys be turkeys on fresh pasture. | Harvest Haven turkeys are truly pasture-raised and free range. Our birds are in the pasture during the growing season where they get to scratch, hunt for bugs, and eat all the greens they want. If there's one thing we've learned, it's that healthy birds need lots of sunlight and salad. And if a turkey doesn't have the ability and freedom to express every part of its scratchy, diggy little personality, something's wrong with how they're being raised. We require a down payment of $50/bird to reserve your order. You'll pay the balance on pick-up. Hey, even tea; nothing's impossible for coffee... | Please note, all ingredients in our recipes are organic. | Caprese Quiche For the quiche: 1 Wholly Wholesome Organic pie crust, thawed for 10 to 15 minutes 6 large Harvest Haven eggs 3/4 cup heavy cream 1/2 teaspoon salt 1/4 teaspoon freshly ground black pepper 1/2 cup coarsely chopped fresh basil leaves 4 ounces cubed mozzarella For the tomato topping: 1/2 pint Harvest Haven cherry tomatoes, quartered 2 tablespoons balsamic vinegar 1/4 teaspoon salt Arrange a rack in the middle of the oven and heat to 425°F. Prick the pie crust all over with a fork. Bake until lightly browned, 10 to 15 minutes. Meanwhile, whisk the eggs, cream, salt, and pepper in a large bowl until combined. Stir in basil; set aside. Let the crust cool for 10 minutes. Meanwhile, stir the tomatoes, vinegar, and salt together for the tomato topping. Reduce the oven temperature to 375°F. Once the crust is cool, place the mozzarella cubes in an even layer on the crust. Pour the egg mixture over the mozzarella. Bake until the quiche is just set and the top is lightly browned, 45 minutes to 1 hour. Let cool 5 minutes before slicing and serving with the balsamic tomatoes. | Sauteed Pears with Bacon and Mustard Dressing 6 slices Harvest Haven beef bacon, diced 4 ripe but firm Bartlett pears, quartered, seeds removed Salt and freshly ground pepper 1 tablespoon white wine vinegar 1 tablespoon whole grain mustard 3 tablespoons plus 2 teaspoons olive oil ½ cup roasted walnuts Sliced chives (for serving) Cook bacon in a large skillet over medium, stirring occasionally, until golden brown and crisp around edges, 10–12 minutes. Using a slotted spoon, transfer to paper towels to drain. Pour off all but 1 Tbsp. bacon fat from skillet. Season pears with salt and pepper and cook in skillet with bacon fat over medium-high, turning occasionally, until golden brown and starting to soften (they should be slightly firm at cores), 5–7 minutes. Transfer to a platter; let cool. Meanwhile, whisk vinegar, mustard, and 3 Tbsp. oil in a small bowl to combine; season dressing with salt and pepper. Toss walnuts with remaining 2 tsp. oil in another small bowl; season with salt. Drizzle dressing over pears and scatter walnuts and bacon on top. Just before serving, top with chives. | Banana Crumb Coffee Cake Crumb Layers 1/2 cup cold butter (8 tablespoons), cut into small cubes 1 cup all purpose flour (gradually add more by the tablespoon if needed) 1 cup packed light brown sugar 1/2 cup granulated sugar 1 tsp ground cinnamon Cake 2 cups all-purpose flour 3 tsp baking powder 1 tsp ground cinnamon 1 tsp salt 3 ripe bananas, peeled and mashed 1/2 cup butter, softened to room temperature 1 cup granulated sugar 2 large Harvest Haven eggs 1 tsp vanilla 1 cup milk Glaze (optional) 1 cup powdered sugar 1-2 tbsp milk Preheat oven to 350º F. Grease a 9" x 13" baking dish with butter; set aside. In a large bowl, use your hands or two forks to crumble together the cold butter cubes, flour, sugars, and cinnamon until the mixture resembles a crumbly topping. Set aside the crumb mixture. In a large bowl, whisk together flour, baking powder, cinnamon, and salt. Set aside. In a stand mixer, mix softened butter on medium until creamy, about 2 minutes. Add the sugar and mix for another minute, until well incorporated. Then add the eggs, vanilla, and mashed bananas, and mix just until ingredients are incorporated (do not overmix!) Turn the mixer down to low, and alternate mixing in milk and flour until all ingredients are combined. Pour half of the cake mixture into the prepared baking dish. Top with 1/3 – 1/4 of the crumb mixture. Then pour the remaining cake mixture on top of that layer and finally, top evenly with the remaining crumb topping. Bake at 350º for 50-55 minutes, until a toothpick comes out clean. To make the optional glaze: In a small bowl, whisk together the powdered sugar and 1 tablespoon of milk. Add more milk as needed until you get the glaze consistency you prefer. Set aside.
