Closed Mondays for Farming and Gardening

Monday isn't the only day we do farming and gardening. Work is getting done all week. It's just that we can focus on our projects on Monday and not worry that our customers are being ignored.

The onions and potatoes have been planted in the field. Jeannie's bedding plants are being hardened off in preparation for the garden. These warm sunny days have been wonderful.

The guys will be moving the laying hens out to the pasture where there are fresh green grasses and forbs, lots of bugs, and room to roam. The broilers are growing nicely and will be moved out there, too.

As soon as the grass is longer and hardier, the cattle and sheep will be enjoying the green goodness. Then, the corrals will be quiet.

Spring is a busy season, but we have the energy for it and the desire to get moving. Just like the flowers that are springing forth.

Harvest Haven Certified- Pastured Chicken

We raise the chicks in the barn for about 3 weeks until they've grown enough feathers to survive cooler nights. At this point they're ready for pasture. The birds are split up into 10-foot by 10-foot cages starting at one end of a pasture that's been recently grazed by sheep. The shorter, trampled grass provides more suitable bedding and renders the bugs easier to catch. And the tender pasture regrowth is much easier for the birds to digest than mature grasses.

Every morning after the dew comes off, we move each cage ahead by a full ten feet, providing the birds with a fresh salad and a side of bugs, which they take full advantage of before resorting to their grain feeders. It should go without saying that we provide exclusively organic grain and clean Grander Living Water.
This system also moves the birds away from their manure which means they are never exposed to any pathogen load. It keeps everything and everybody healthy and clean.

Our birds have full access to sunshine and fresh pasture breezes that are 100% free of ammonia. The healthy pasture grasses make immediate use of the nitrogen in the manure to prevent any odors or runoff.

The whole system is beautiful and clean, naturally providing meat that is clean and nutritious.

Pulled BBQ Turkey Burgers

1 lb Harvest Haven Pulled Turkey
1 bottle Savor Organic BBQ Sauce
1 package Lakeview Organic Kamut Hamburger Buns
Pickles
Coleslaw

Combine turkey and BBQ sauce in a bowl.

Scoop some coleslaw onto the bottom bun. Add some pickles. Divide the turkey between the six buns. Place the other half of the bun on top.

Enjoy with salad and potato chips!

Crispy Oven Fries with Guacamole

4 large Harvest Haven potatoes
1-2 tbsp olive oil or coconut oil
1 tbsp balsamic vinegar
1 tbsp soy sauce
1 1/2 tsp onion powder
1 tsp paprika
1 tsp garlic powder
1/2 tsp smoked paprika
2 tbsp nutritional yeast flakes (optional)
salt and pepper to taste

Guacamole
1 large avocado
1 small tomato
2-3 cloves of Harvest Haven garlic
1 tbsp lime juice or lemon juice
A small handful of greens (e.g. basil, parsley)
A splash of milk
Onion powder, cumin, salt & pepper to taste

Potato Wedges

Preheat oven to 390 F and line a large baking sheet with parchment paper.

You can peel the potatoes or leave the peel on for some texture. Slice each potato in half lengthwise. Then cut the halves into thirds or fourths (depending on the size of the potato).

Add potato wedges to a large mixing bowl. In a small bowl whisk together all other ingredients. Pour the mixture over the potato wedges and toss until they are coated from all sides.

Spread potato wedges over the prepared baking sheet in a single layer. Bake for about 40 minutes, flipping them halfway through until they are golden brown and crispy.

Guacamole

Five minutes before the potato wedges are ready, start making the guacamole: Simply blend all ingredients in a food processor until creamy. Enjoy!

Frozen Strawberry Lemonade Pie

12 Tablespoons butter
24 whole graham crackers, crushed into tiny crumbs
1/4 cup sugar
Water, as needed
3 Harvest Haven egg whites
Juice of 2 lemons
3/4 cup sugar
1 cup whipped cream
1 lb Harvest Haven frozen strawberries, mostly thawed

For the crust, combine butter, crushed graham crackers, and 1/4 cup sugar in a large bowl. Stir together until the mixture begins to adhere to itself. You should be able to pinch a small amount at a time and have it stick. If it doesn't, add a tablespoon of water at a time until it does. Divide the graham cracker crumbs between two 9-inch pie plates, using your fingers to press the mixture evenly across the bottom and up the sides. Place the crusts in the freezer while you make the fillings.

Place the egg whites in a clean mixing bowl. Use electric beaters or a stand mixer fitted with the whisk attachment to beat the egg whites on medium speed for 1 minute. Add the lemon juice. Beat on medium high speed for 4 minutes. The mixture will look foamy and limp. Add the sugar, a quarter cup at a time, beating on medium high speed for 1 minute after each addition. The eggs will take about 8 minutes total to whip up completely.

Add the frozen strawberries and beat on medium speed until they're broken up and evenly distributed throughout the egg mixture. Fold in the whipped cream.

Divide the strawberry mixture evenly between the two pie pans. Cover and freeze for at least six hours or overnight. To serve, drop the pie plate in an inch of hot water for about 30 seconds to help loosen the crust. Then slice and serve.

There's been a lot of activity down on the farm now that spring has arrived. We've put together a collage of pictures and videos of some of the cute critters and their escapades.

Baby Layers
When Martin takes on a project, he goes all in, which is evidenced by how many chicks and laying hens we have everywhere. He doesn't want our customers to be short of eggs anymore, so he's doing something about it. Now, we have chickens of every size and color all over the farm.

Lambs

The lambs are so cute until they get over a couple of months old. Then, they become robust rabble rousers, kind of like teenagers. Even now, some of them are getting into mischief as they squeeze under one of the gates and go running around the yard in a gang. They know they're not supposed to be outside the corral because as soon as they see someone walking by, they run for their pen. The little rascals!

Rooster on Gigantor

Martin walked in on a strange scene in the barn. The real free-range big red rooster was perched on Gigantor, Konstantijn's pet ram. Grabbing his phone, Martin was able to get this video. You'll see that Cherry's calf had to investigate this peculiar occurrence, too.

Stripes on ATV

Stripes, our orange tom, absolutely loves to travel on the ATV wherever it goes. When work is being done in the field, he'll sit on the ATV for hours, sleeping on the seat in the sun or safely ensconced in the back protected from Harriett who likes to tease him or even grabbing an unsuspecting gopher for lunch. What a cool and crazy cat!
