Harvest Haven Beef Stir Fry – Tender thin strips of sirloin tip beef make delicious stir fry recipes.

Harvest Haven Garlic – As you can see, we love our garlic!

Harvest Haven Parsnips – A sweet cream-colored root vegetable that makes a delicious side dish. Roast with olive oil and spices until caramelized a bit and still slightly crispy, sauté in olive oil with a dash of rosemary or thyme, boil and mash with butter, milk, and grated Parmesan cheese.

Organic Austrian Pumpkin Seeds – These large, dark green seeds from Austria (not China) are rich in flavor and nutrients. They make a wonderful accompaniment to any salad and a tasty snack.

Mongolian Beef

1 pound Harvest Haven stir fry beef
5 cloves Harvest Haven garlic, minced
1 jalapeño, seeded and diced
1 inch ginger, peeled and diced
3 green onions, thinly sliced
2 tablespoons corn starch
1 tablespoon sunflower oil
For the sauce:
1/2 cup low sodium soy sauce
1/2 cup brown sugar
2 teaspoons corn starch

Toss the stir fry beef in a large bowl with 2 tablespoons corn starch. Set aside.

Add all sauce ingredients to a mixing bowl, and stir until combined. Set aside.

Heat a pan over medium heat for a few minutes until hot. Add oil to coat the bottom. Add jalapeño and ginger. Cook for a few minutes, stirring occasionally.

Add garlic and sliced beef to the pan, evenly distributing the beef. Cook until the beef browns, about 5 minutes, stirring frequently.

Stir the sauce and pour it into the pan with the beef. Mix well until everything is coated with the sticky sauce. Let simmer for a minute until thickened.

Remove the pan from heat and stir in green onions.

Serve over cooked white rice.

Crunchy Asian Parsnip & Carrot Salad

1 Tablespoon soy sauce
2 Tablespoons olive oil
2 Tablespoons rice wine vinegar
1 Tablespoon white balsamic or red wine vinegar
1 teaspoon ginger, freshly grated
1 teaspoon garlic crushed
1 teaspoon Harvest Haven honey
2 teaspoons sesame oil
4 green onions, chopped
3 Harvest Haven parsnips, grated
4 Harvest Haven carrots, grated
2 Tablespoons Austrian pumpkin seeds
1/4 cup cilantro
1/4 cup cashews

In a bowl, whisk together the soy sauce, olive oil, rice wine vinegar, balsamic vinegar, ginger, garlic, honey and sesame oil.

In a large bowl, add your grated parsnips and carrots, green onions, pumpkin seeds, cilantro, and cashews.

Mix well with the dressing.

Refrigerate until ready to eat.

Tastes great the next day too.

Coconut Oil Cake

Cake
2 cups all-purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
1 1/2 tsp salt
1 cup shredded coconut
2 large Harvest Haven eggs, room temperature
3/4 cup Wild Tusker Organic extra-virgin coconut oil, room temperature
1 1/4 cups whole milk, room temperature
1 tsp pure vanilla extract
1 1/4 cups sugar
Glaze
1 cup powdered sugar
2-3 Tbsp milk
1/4-1/2 cup shredded coconut

Preheat oven to 350 degrees then prepare a 9" cake pan. Do not use non-stick spray for this cake. Instead, trace a circle on a piece of parchment paper, cut the circle out and set aside. Rub a little softened butter inside the pan then place the parchment paper circle into the bottom of the pan. Rub once again with butter then dust with flour until completely covered.

In a large bowl, whisk together flour, baking soda, baking powder, coconut, and salt until well blended then set aside. In a separate large bowl, mix together eggs, coconut oil, milk, vanilla and sugar with a wire whisk. Add dry ingredients to the wet ? at a time, completely incorporating the dry ingredients before adding more. Don't overmix! Your batter will be runny and you may feel like you've done something terribly wrong but this loose consistency is normal for an oil cake.

Once mixed, pour the batter into the pan. Bake 40–50 minutes or until a toothpick inserted comes out with only a few crumbs attached or you touch the center of the cake and it bounces back. Allow it to cool on a wire rack 30 minutes then invert to remove the cake. Remove parchment paper from the bottom then carefully turn right side up to cool completely on a wire rack.

Once the cake has cooled place it onto a cake plate. Stir together the powdered sugar and milk to form a glaze then spoon or drizzle it over the top of the cake. Sprinkle with ¼–½ cup shredded coconut, allow it to set then slice the cake and serve.

Harvest Haven Harmonies – Victor and the Peculiars

There's healing in music, if it's the right kind. Like the quote at the beginning says, we need to take time to let that healing happen.

The fellows at Harvest Haven are taking time in the mornings to exercise their bodies and in the evenings, they're making music. James and Dan are newbies to playing music in a band but are learning quickly. James bought a set of drums and Dan is using Jeannie's bass guitar.

I took a video of them playing one of Victor's songs, but they didn't want me to share it. Jonathan, our media man, said, "Wise decision," after he saw it.
Anyway, I have a picture of Victor and the Peculiars set up in a tiny basement room. It was loud in there! They need a studio!

In a previous Harvest Haven Happenings, we mentioned that Victor was performing with a couple of other singer/songwriters at Gravity Espresso & Wine Bar. We all enjoyed a wonderful evening.
