Potatoes Are Good and Good for You

Let us change your life with truly delicious potatoes.

The humble potato has been much maligned for not tasting good and for making you fat. Conventionally-grown potatoes in the supermarkets don't taste good, so they will make you fat when you must dress them up to make them appealing. Also, copious amounts of harmful chemicals have been used to produce and store them.

For example, a local farmer fed conventionally-grown potatoes to his farrow sows. They didn't produce any piglets the next spring.

Among the many chemicals sprayed on non-organic potatoes is a product called Sprout Nip, which inhibits sprouting by preventing cell division. It prevented the sows from having young.

Organic potatoes are exceptionally healthful, being a very good source of numerous vitamins and minerals, as well as a variety of phytonutrients that are important antioxidants. This comfort food can be enjoyed in so many ways that it should be part of your menu everyday.

Here are the varieties of potatoes we have:

German Butter – tender, buttery yellow flesh; versatile for every preparation;

Linzer Delikatess – delicate, buttery flavour; ideal for roasting and potato salad;

Norland – traditional red potato, good for boiling, frying, and roasting;

Russet – the classic white potato, great for baking and French fries;

Harvest Haven Breakfast Bake

2 cups shredded Harvest Haven potatoes
1 8 oz block cream cheese, cut in ˝" cubes
1 tsp salt
1 tsp pepper
1 lb Harvest Haven beef breakfast sausage
8 oz grated sharp cheddar cheese
12 Harvest Haven eggs
1 cup milk
Ľ cup flour

Preheat oven to 350F

Cook sausage in a skillet over medium high heat working it into crumbles with a spatula until it is cooked through.

Combine the potatoes and salt and pepper. Then gently mix in the cream cheese until evenly distributed throughout the potatoes.

Spread the potato mixture into the bottom of a 9x13 baking dish then top evenly with the sausage and ˝ of the cheddar cheese.

In a separate bowl, place the flour in the bowl and slowly add milk while whisking to keep the mixture smooth until all milk is added. Then crack each of the eggs into the mixture and whisk again until the mixture is smooth. Pour the egg mixture over the top of the sausage, potato dish.

Spread the remaining cheese over the top of the casserole.

Bake on the middle rack for 30-40 minutes or until the casserole is done through.

Oven braised beef short ribs 3

Harvest Haven Short Ribs

This is an easy and tasty way to prepare a less-tender cut of meat.

3-4 lbs Harvest Haven beef short ribs
2 medium Harvest Haven onions, sliced
1 clove Harvest Haven garlic, minced
1 cup tomato sauce
3 Tbsp brown sugar
3 Tbsp apple cider vinegar
2 Tbsp blackstrap molasses
1 Tbsp Worcestershire sauce
1/2 tsp dry mustard
1/2 tsp chile powder or more
1 1/2 tsp salt
Pepper to taste

Remove excess fat from ribs. Sprinkle with salt and pepper. Place in roaster.
Spread onions over top.

Combine remaining ingredients; bring to boil and simmer for 5 minutes.
Pour over ribs.

Cover and bake at 275° F for 3 – 4 hours or until very tender.

Cool. Skim fat from surface. Reheat.

Serves 4.

Beet and Carrot Cake with Caramel Cream Cheese Frosting

3 Harvest Haven eggs
2 cups sugar
3/4 cup sunflower oil
1tsp vanilla extract
2 tbsp hot water
1 cup Spelt Flour
1 tbsp baking powder
pinch of salt
1 tsp ground cinnamon
pinch of ground nutmeg (optional)
1 cup finely grated Harvest Haven carrot
1/2 cup finely grated Harvest Haven beet
1/4 cup coarsely chopped walnuts or pecan nuts (plus a handful of extra for decorating)

ICING
1/2 cup butter
1/2 cup dark brown sugar
1/3 of a cup dulce de leche
1 cup cream cheese

Preheat the oven to 350F and grease a 9 inch ring cake pan.

Separate the eggs and put the egg yolks in a food processor or electric mixing bowl with the sugar, water, vanilla and oil. Mix until combined.

Sift the flour, baking powder and spices over the bowl and mix / process until smooth.

In a separate bowl beat the egg whites until stiff.

By hand stir the beet, carrot and nuts through the mix, and gently fold through the egg whites.

Fill the cake pan and bake for 40 – 50 minutes until the cake has turned brown, is firm to the touch and when sharp knife comes out clean.

Allow the cake to cool in the tin and make the frosting.

TO MAKE THE FROSTING – beat the sugar, butter and caramel until pale and fluffy. Add the cream cheese and continue beating until the mixture is smooth and the sugar granules have worked out.
Spread a thick layer all over the cake and decorate with a few extra chopped nuts.

Our media man, Jonathan, and his travelling companion, Peter Fiorino, are over half way through their West Coast adventures with Media Goes. "Seen and done lots, met some interesting people," they report.

Subaru of Lethbridge provided them with a wrapped (logos on it) sporty orange 2018 Crosstrek. I think it's cute, but guys wouldn't use that description. They love the car!

The first stop on their journey was Vancouver to visit ProOrganics, where they met Andy and Jacquie who have been our wholesale produce reps for many years.

In Seattle, Jon and Peter met Michael who flew in from New Orleans to join them. He's a singer, songwriter, and Parkour athlete who seems to stay out of trouble, unlike Peter.
