The Recipe Box

Harvest Haven Short Ribs

This is an easy and tasty way to prepare a less tender cut of meat.

3-4 lbs Harvest Haven beef short ribs
2 medium Harvest Haven onions, sliced
1 clove Harvest Haven garlic, minced
1 cup tomato sauce
3 Tbsp brown sugar
3 Tbsp apple cider vinegar
2 Tbsp blackstrap molasses
1 Tbsp Worcestershire sauce
1/2 tsp dry mustard
1/2 tsp chile powder or more
1 1/2 tsp salt
Pepper to taste

Short Ribs

Remove excess fat from ribs. Sprinkle with salt and pepper. Place in roaster. Layer onions over top.

Combine remaining ingredients; bring to boil and simmer for 5 minutes.

Pour over ribs; cover and bake at 275° F for 3 – 4 hours or until very tender.

Cool. Skim fat from surface. Reheat.

Serves 4.

"Three Sisters" Stew

Three Sisters refers to the Native American practice of companion planting corn, beans and squash in the same field.

1/4 cup olive oil
2 Harvest Haven onions, sliced thin
2 cloves Harvest Haven garlic, chopped
1/2 tsp paprika
1/4 tsp cayenne
1 tsp dried oregano
1/4 cup roasted red pepper, chopped
Roasted Anaheim pepper, chopped (amount depends on taste)
1 cup canned tomatoes in thick puree
2 lbs Harvest Haven squash (Turks Turban, Acorn, or Butternut), peeled, seeded, and cut into 1-inch cubes
1 ˝ cups water, optional
2 tsp salt
2 cups canned beans (kidney, black, pinto, whatever suits your fancy)
2 cups fresh or frozen corn kernels
Fresh cilantro, chopped

In a Dutch oven, heat the oil over moderately low heat. Add the onions and cook, stirring occasionally, until translucent, about 5 minutes.

Add garlic, paprika, cayenne, and oregano and cook, stirring, until fragrant, about 1 minute.

Stir in the peppers, tomatoes, squash, water, and salt and bring to simmer. Cook the stew, covered, stirring occasionally, until the squash is almost tender, about 15 minutes.

Uncover and simmer vigorously until almost no liquid remains in the pan, about 5 minutes.

Add the beans and corn and cook until the corn is just tender, about 5 minutes.
Stir in the cilantro and serve.

Martin, Mathijs and James

Here are the guys working through the instructions for building the wood-fired cook stove. Mathijs is patiently standing at attention. He just started. James has been standing at attention for several hours now. Can you tell? With James standing at less than an optimal angle to Martin's view, perhaps Martin didn't know he was there? And here James is, feeling neglected and dejected.

Moral: You need to know where you stand. Mat's catching on!

We look forward to Martin giving us a video tour of what he's doing. It should be in our next newsletter.
