Beef Satay

Steak Satay

1˝ lbs Harvest Haven Beef Tenderloin
1 Tbsp olive oil
1 Tbsp Balsamic vinegar
1/4 – 1/2 tsp hot sauce
2 tsp dried onion
1 Tbsp brown sugar
1/4 tsp ground cumin
1/4 tsp ginger
2 cloves Harvest Haven garlic, crushed
1/4 cup soy sauce

Skewers for kabobs

Cut beef into 2" cubes and place in a shallow dish for marinating.

Mix remaining ingredients in saucepan. Bring to boil and simmer 5 minutes. Cool.

Pour sauce over meat, cover and marinate a few hours or overnight in refrigerator. Turn meat occasionally.

Remove meat from marinade and place 5 or 6 pieces on each skewer. Reserve marinade.

Barbecue about 8 - 12 minutes to desired doneness, turning frequently. Brush with reserved marinade while cooking.

Serves 4

Marinated Three-bean Salad

Combine:
2 c Harvest Haven green beans, cooked till tender crisp
2 c Harvest Haven yellow beans, cooked till tender crisp
2 c Eden kidney beans
2 c Eden garbanzo beans
1/2 c red pepper, chopped

1/2 c Harvest Haven celery, sliced
Harvest Haven parsley, chopped

Mix and pour over vegetables (you may need to double this mixture):
1/4 c wine vinegar
2 Tbsp olive oil
1 tsp salt
1/2 tsp sugar
1/4 tsp pepper
1/8 tsp dry mustard

Chill salad overnight. Before serving, toss to coat beans with marinade.

Serves 6 to 8.

Fiesta Onion Salad

4 Harvest Haven sweet onions, sliced

1/3 c Harvest Haven honey
1/3 c water
1/3 c cider vinegar

1 c mayonnaise
1 tsp celery seed
Put honey, water and cider vinegar in a bowl. Stir until honey dissolves.

Pour over sliced onions. Let stand for three hours or overnight. Drain well.

Combine mayonnaise and celery seed. Stir into onions.

Serve.

Meet Archie our new Speckle Park bull. We're looking forward to colorful calves in the spring.

Speckle Park cattle were developed in Saskatchewan in 1959. "Speckle Park were named just that by Bill and Eillen Lamont (the ranchers who started them). Both parts of the name refer to the colour pattern. 'Speckle' was obvious because of the spots on the rear quarters and throughout; and 'Park' because some of the Speckle Park display the white park colour pattern of a white body with coloured point about the ears, eyes, muzzle, lower legs and teats. Speckle instead of 'spotted' probably reflects a generation very familiar with the Biblical story of Jacob breeding speckled cattle and sheep to outwit Laban, his father-in-law, in the thirtieth chapter of Genesis."
